Poki Poki recipe is a Filipino (Ilocano) authentic dish made off grilled eggplant, tomato, onion, garlic and egg. This recipe is close to tortang talong or eggplant omelette. Poki Poki recipe is perfect for breakfast with your favourite bread rolls or with plain or fried rice.

2 eggplant, 1 tomato medium (dice), 1 onion medium (dice), 1 egg (beaten) and salt to taste.
